Darjeeling, West Bengal, 27^th November 2025 : The air in Ramada Darjeeling was thick with the rich, intoxicating aroma of cinnamon, nutmeg, and aged spirits today as the city officially ushered in the festive season with its annual Cake Mixing Ceremony.

This age-old tradition, dating back to 17th-century Europe, marks the first crucial step in preparing the traditional Christmas plum cake and is considered a joyful harbinger of the holiday spirit, symbolizing unity, goodwill, and an abundant year ahead.

Dozens of guests—including social media influencer like Ruchika Tandon, Bidisha Sarkar, tollywood actress Ms. Soumitrisha Kundu – donned chef hats and gloves to partake in the vibrant ritual. Spread across a massive table were kilograms of dry ingredients, forming a colourful mosaic : plump raisins, glazed cherries, candied peels, crunchy almonds, and walnuts.

Under the guidance of Executive Chef Mr. Arun Kumar Sharma, the participants enthusiastically plunged their hands into the mixture. The real cheer erupted as bottles of rum, brandy, and wine were poured generously over the mountain of fruits and nuts, ensuring the mix is properly soaked to mature and deepen its flavours over the next few weeks.

Historically, the ceremony was a family affair observed after the harvest season to preserve fruits and nuts for the winter. Today, it has evolved into a popular community and social event, especially celebrated by hotels and bakeries, offering a unique opportunity for people from all walks of life to bond over a shared, spirited activity. The mixed fruit base will now be carefully stored until it is used to bake the exquisite Christmas cakes, cookies, and puddings that will grace the hotel’s festive menus. The day’s merriment was further enhanced by lively carols and a special high-tea, leaving guests with a palpable sense of warmth and festive anticipation.
